Apple Crisp (SCD legal)



2 apples
1/2 tablespoon honey

Topping:

1/2 stick butter
1/2 cup almond flour
1/4 cup honey
1/2 cup ground almonds or pecans
Cinnamon to taste 


Butter the bottom and sides of a small round baking dish. Peel, core, and thinly slice apples.  Place half of the apple slices in the baking dish. Drizzle a ½ T of honey over them and then put in the rest of the apples. You should arrange them so they lay pretty flat. 

Topping: Mix butter, almond flour, honey, and cinnamon. Combine all these ingredients in food processor and you should have something the consistency of a good cookie dough.

Pat the topping onto the apples. Sprinkle almonds/pecans on top.  Bake at 350 for 30-40 minutes.

Bacon Egg Cups




12 Strips Turkey Bacon
6 Eggs
½ c Shredded Cheese 

Preheat Oven to 350.  Line muffin pan with turkey bacon in each individual cup.  Beat the eggs and fill cups 1/2 way if you are adding ingredients and 3/4 the way if you are not adding ingredients. Add any extra ingredients (veggies, etc.).  Cheese is added in the last 2 minutes.  Bake 15 minutes.  Then, add shredded cheese on top and bake 2 more minutes.

Snacks

Almond Flour Gingerbread Cookies



2 c. almond flour
1/4 tsp baking soda
1/8 tsp salt
2 T. coconut oil
1/3 c. honey
1/2 tsp vanilla extract
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp cinnamon
Preheat oven to 275 degrees F. In a large bowl, mix all ingredients. Chill for about a half hour. Roll out onto parchment paper. Bake for 20 minutes until slightly browned.  Cut into squares while still warm.

Tasty Trail Mix


Mix together a handful of each of the following: raisins, almonds, and M&Ms.  Super easy, but super tasty.
